Marbling is the fine intramuscular fat dispersed through a cut of beef. In Wagyu, that marbling can be especially abundant and delicate, changing both texture and flavor.
What marbling does
As the steak cooks, intramuscular fat renders and contributes richness, aroma, and a tender mouthfeel. Distribution matters as much as the total amount: fine, even marbling gives a more consistent experience from edge to edge.
Serve a smaller portion
Highly marbled beef is intense. A modest portion, sliced after cooking and shared, can feel more satisfying than a large conventional steak.
Keep the cooking simple
- Bring the surface dry before searing.
- Use a hot pan or clean grill grate.
- Season simply and watch the heat closely.
- Rest briefly, then slice across the grain.
